Ripe Wild Elderberries

In the summer of 2004, a friend and his wife came for dinner. During our meal, the conversation turned to our plans to clear the bushes and weeds out of our horse pasture. Our friends expressed amazement that we would think of doing such a thing. They explained to us exactly what we had: how much of a gift the “Elderberries” were, and the myriad uses of them. So we listened and asked a million questions, beginning with, “What is an Elderberry?” It was at that very moment that our lives changed.
After many hours of research on the internet and lots of excitement, we soon learned that we had a treasure right in our hands and had never even known it! With the help of our children, we made our first batch of Jelly in the fall of 2004, as an “experiment”, and as we all sat in the kitchen waiting for it to finish, none of us could have imagined how that event would transform our lives. It was like taking hold of your future and knowing you had something special.
Our name celebrates the Elderberries that grow wild on our property, and all the wonderful opportunities their discovery has brought us. It is said that when the Fairies come through on Mid-Summer Night, they ride the Elder branches like horses, causing then to tip over and ripen. Out of this old English tale emerges the name Fairy Wood, and since Elderberries grow in thickets, we became Fairywood Thicket....
We are a small farm located in Fairburn, GA. Our specialties have grown from one spectacular Jelly, Elderberry (Mother Elder), to a unique group of hand-made Jams, Jellies and Chutneys, using an ever expanding selection of special fruits, hot peppers, and flowers. Our fruits come from a variety of sources, including our farm, other local farmers that we barter with, local folks that have fruit trees growing on their land, and wild harvest.
We produce our products using a restored Vulcan gas oven, in traditional Copper Jam and Polenta Pots. Our commercial kitchen is licensed through the Georgia Department of Agriculture. Each batch is created and designed around the fruits we have available. We never use artificial ingredients, corn syrup, or food coloring in our Jams.
Our products are made primarily from only four types of ingredients: Fruit, Sugar, Spices, and Pectin.
